Because your proverbial power level in a duel is determined by how many cards you have in either your hand (or your GY), more cards in hand = good, this is why Maxx "C"/Mulcharmy (cards that let the user draw 1 whenever the opponent special summons) can effectively be a turnskip against combo decks.
Pot of Greed also isn't once per turn, and YGO has no mana system like MtG so if you draw two Pots or draw another pot off your first use of the card, then bang, you now get to use it again to draw even more cards. This is why every pot after Pot of Greed has very strict usage requirements on it on top of having the user pay a very hefty cost.
That being said though, in the modern YGO landscape, some could argue Pot of Greed isn't THAT good anymore since we now have cards that let you draw 2 AND are the deck's starters and extenders that play on turn zero. Maliss was a fucking mistake.
