LOTR is an easy choice for the fantasy and worldbuilding aspects of it and I'd love to hear her thoughts on that world and Gensokyo, plus it's long and comfy enough to put as background noise that you can comfortably tune in anytime.
Other than that I'm not sure she'd like movies I like such as Eyes wide shut or Heat.
She'd probably greatly enjoy Fantastic Mr Fox tho.
