They lost that "pulp" feel. Arguably its been a problem since Phantom Menace but is way worse now. Go watch Last Crusade.
Characters fight with sloppy punches, kicks, its all timed to the music. Elaborate sets get destroyed by the end of an action scene. There's danger. Will Indy get flattened by the tank? Can he KO the fat cultist before Short Round gets stabbed? Luke hijacks a guy's speeder while they're riding at 100mph. Imagine that! Our heroes are struggling to kill two regular bad guys!
Then watch Revenge of the Sith. Our heroes chop CGI robots in half while running across CGI backdrops so they can kill the four armed CGI man.
Sequels shit it up even more. Everything looks like a half-baked student film, the lighting is universally dogshit in every scene. No interesting choreography, no danger, no stakes, no nothing.
All slop.
