My current headcanon is Doffy hard counters the holy knights. For some reason he was dangerous to them, and they couldn't kill him. We know the Ope Ope could allow him to rule the world and take over Marijoise, but obviously they could have killed him after Law left and became a Shichibukai so that couldn't be the reason they didn't kill him AFTER Law left.
So my theory is that demon contracted knights lack the will to resist becoming a puppet to his string fruit, and he could turn the God Knights or anyone Imu uses Demon Contract on against the WG.
