anon there's very clearly been some big shift in the direction don's story was gonna go.
even if the whole bloodfiend thing was there from the start, they probably originally had her travelling with a some fixer group instead of being stuck in the lighthouse.
the fact that the theater company photo originally had her smiling in knight armor. but got changed into the sancho outfit near canto 8's release is only proof that something got changed along the way.

ALSO one last point.
don's lcb outfit originally had "miguel" written on it.
and only got changed to don quixote after the warp intervallo came out.
explain that?
