I wouldn't say that anxiety is a coping mechanism. Eating disorders are mental conditions, as in they are the disease in an of themselves not a cope for something else. I'll give you the benefit of the doubt and say you meant stress eating, but then my point would be that the eating isn't the reason why you got fired from your job or your wife divorced you or friends mistreat you. Again it's the smoke rather than the fire. The moment the fire clears, so does the smoke. You don't blame the thunder for the lightning, the causal relationship is only one way.

Again this is another mental condition, as in a disease in and of itself, not a coping mechanism for something else. Take a look at this pic to better understand. Yes we can say that some are "immature" and some are "mature" but coping mechanisms are not a problem in and of themselves. They don't cause the thing you are coping with.
