The biggest issue with dess knight here even with your interpretation is thst the mask coming off won't mean anything to her. For a susie-centric plot line, that's a major dud.
The knight reveal is a huge plot event and it needs to actuall matter for susie, wether its fear, betrayal, etc. and that's something less popular theories frequently have over it.
