Because they don't die, they just can't. In ep4 Mortis confuses the word "sleep" and "death" when she talks about Mutsumi with Saki. Death is the opposite of life. When a person is asleep are they alive or dead? They don't know what's happening in the world and they can't do anything. This is the state Mutsumi was in. This is the kind of death that Mortis and Mutsumi they are afraid of, a state when you don't know anything and have no control.
Also, in one of the ave mujica merch (like a card or something that) have Mortis dialogue that "she is reborn every time". So, Mortis and Mutsumi could "disappear" in ep10, but then be reborn because they can't die.
