At some point I learned about the chain being different on mimics, but later decided the more fun way to notice them is to watch to see if the chest opens up to breathe sometime.
I loved how in Dark 3 the very first chest you come across is a mimic and I felt so smug when I checked before opening it.
Also remember Dark Souls 2 had a guy pretending to be a door and that one forest with the translucent enemies who I took for player ghosts at first, that was great too.
The only other example I can think of was Fallout 4's Far Harbor DLC having one anglerfish-esque enemy who hid underground and pretended to be a harvestable plant and a huge hermit crab who lived in a wrecked car, though the latter was spoiled for me, when I wanted to lock on to an enemy and the game locked onto a "car" and displayed "hermit crab" on the health bar
