I'm pretty sure it's just an effect of the German language. Goldstein, Silberstein, Rosenstein, Schwartzstein, Weinstein, Bernstein, Blumenstein.
Some of them don't make sense (like Blumenstein=Flowerstone), but I imagine a lot of jews when forced to take German surnames wanted to be associated with the jewelry trade, and the "stone" thing has to do with that.
