I've see 4 leviathans at the time somewhat commonly, and they can all aggro you at once, but I simply run behind rocks and wait a bit for their pathing to make it impossible to intercept me and then move in a way that makes it impossible to hit me. And yes, this can be done on barren biomes with basically little cover.
