Sunset's mind reading is mostly useless unless needed by the plot. Her genius-level intelligence and leadership skill can be explained by being raised by Celestia. She shares it with Cadance and Twilight, but not Sci-Twi. Also, she doesn't know as much as magic as Twilight, which is why she asks for her advice all the time.

She does compete in sports in the comics, and it takes her quite a bit of training since, in her words, she's more used to moving a pony body.

How does mind reading stop a bullet? You could literally take her out with a single shot. And since it's activated by touch, she can't even see you coming.

She lost to Sci-Twi in math. She still seeks out Twilight's knowledge as her superior.
