That can be very broad. We've had plenty of game involving dinosaurs, some of them even recent, the question is how much importance to give them, how much effort to put into them.
As games go, dino roles are limited to animals, it's not like they'll learn to open doors or something.
They are extinct and not from the sames period so you can't even use time travel in any easy way.
Putting them in competition with every other fictional and more original dragons you could imagine instead of T-rex n°986 half-feathered edition.
