In the comics, Loki's plan at the end of Defenders: Beyond by Ewing is that they want to free all of creation from the cycles of narrative and the constraints of story using the Eternity Mask. Ewing continued that into Immortal Thor, where Loki killed Thor as part of a scheme to allow Thor to be reborn as a mortal and so in the process ascend to a higher form of god beyond the Rune King. The MCU show is based a lot on this stuff.
