I think you're better off running through stages and learning your way around like that, maybe pick one specific short stage and grind it until basics click? Also, I think DR2 is a good choice because it's a very controller friendly almost-sim, so I'm sure it'll teach you a lot of good stuff. But if you want to try, give Assetto Corsa a shot, it has tons of 'open world' maps and it has lots of weak cars that are easy to handle, it's just that unfortunately AC has horrible controller support and it makes no attempt of compensating for the lack of precision compared to a wheel. Still, if you can handle the jank, AC is probably among the comfiest little casual driving games.

Take your time, simfaggotry is a massive topic and skill ceiling is infinite. Takes years to get good but fortunately only weeks to get competent enough to start understanding what you're doing and having fun, so the only way to enjoy it is to appreciate the process.
