Ignore those other two anons, not everything has to be about 4chan vs reddit. The reality is that it was a 'breath of fresh air' for adult animated comedy at the time of its release. As I recall, Rick uttering shit like 'there is no God' and 'me too smart 4 u' was only taken seriously by the show starting from season 3. As far as what R&M brought to adult animation that made it a lightning rod for cultural interest, I would say its mix of irreverent comedy, jokes and episodic plots based around unique use of sci-fi tropes, and its potential to carry an overarching plot over the course of a season as opposed to always resetting to status quo at the end of an episode.
So, irreverent comedy is probably the most basic quality of all adult animation, but in R&M's case it goes a bit deeper. The show had the initial perception of treating literally nothing as off-limits in terms of humor. Like one anon said, that includes '4chan brained shit' like incest and sex and so on. In hindsight that's utter BS, I find Family Guy and American Dad to have more willingness to tell potentially controversial jokes about such things than R&M. But compared to how neutered it is now, back in the day it seemed very different in that regard. And for the other points, the Cronenberg episode is very notable.
