Don't know what to tell you except you've somehow just missed out on having good mac and cheese.
Get some at a gastropub or a hip restaurant. I promise you it won't be bland. You go to some stodgy old steakhouse or a buffet or something you're gonna get very unimposing baked mac and cheese with soft pasta and not much zip. I know what you're referring to, but believe me, there have been a lot of cooks trying to destroy that notion by making good mac with good cheeses. "No such thing" is a terrible absolute to ever use, especially in cases like this.
Keep ordering it but try different venues.
