Because the two biggest sellers have cornered the market and if you try to set up your own stall you'll get fucked over by any number of hurdles put in the way precisely to stop your stand from making it. Eg:
- You need to buy some kind of special license to open the stand that costs $50,000/yr , pennies to major conglomerates, but prohibitively expensive for market entry
- They buy all the land that you would use to open these stands on, but they don't let you run a stand, so they own it just so that you *cant* own it and people have to go to them
- They contact all suppliers that work with you and say "If you keep doing business with AusAnon we won't buy from you"
The second example there is what Coles and Woolworths have done to fuck up the grocery market here in Australia, the third example they do to farmers who try to sell to suppliers that offer better prices but lower volumes.
Note to lurkers: Coles and Woolworths are our two major grocery chains.
