In order for the fallen angels to enter the physical world (and breed with human women) they had to "acquire" a human body, otherwise they would just be an insubstantial spirit.
BUT, all human bodies have (human) souls in them and any human soul (even a baby's) can easily withstand possession by a fallen angel.
The loophole they found was to take malformed (animal soul) or born dead (no soul) human babies and then "fix them up" and / or bring them back to life.
Even though they had incredible knowledge and power they were woefully ignorant of how the physical realm (and physical life) actually works.
It took them a LONG time and many tries to finally get it right to the point that they could interact (and breed) with humans the way that they wanted, and even then, the genetic damage from the substandard bodies they "acquired" would often manifest in the nephilim offspring.
