Yeah one problem was that the French knights were all obsessed with chivalry and the chivalry that they were exposed to at the time said that a true knight only had two options when defeated, either to fight to the death or to allow themselves to be captured, retreating was out of the question
The problem was that the armies they were facing were increasingly fielding commoners and so they'd be slaughtered to death, unwilling to surrender to those that they saw as beneath them
