it never goes "below the horizon" it goes beyond the horizon, beyond how far you can see it, to where it's light doesn't reach. you can zoom in on a sun that is going "below the horizon" and observe how it never actually goes "beyond the curve", it simply goes away from you until you can't see it anymore
