Yes, but it's not just that. The devs at Nintendo are actually expert players who know what their games are supposed to look like and how they are supposed to play. Their small numbers provide a better communication between different teams, they have a clear vision since from the start, and they know how to bounce back from unexpected problems/delays.
Ubisoft, and other ginormous companies like them, lost their core identity. They are made of immense teams who span across the globe, often comprised of people who can barely communicate in the same language. There are so many directors, lead artists, specialists and coordinators a game's aesthetic can change every two years. They have no idea what made AC so appreciated and loved, since most of their devs are young hires who never touched a controller before or old jaded fucks who lost all momentum. I'm not saying Nintendo is perfect, far from it, but they are the only true videogame company left at this point.
