Knight only got tied to horse riding for a brief period, around the Norman Conquest in the 11th century. Before that it wasn't associated with the french for cavalryman (chevalier), only when Normans introduced a feudal system with a class of mounted warriors that the "cniht" stopped reffering to young boy servants/vassals/farmhands. From there it quickly stepped away from the role of cavalty and took a meaning closer to what we know today, where knighthood became tied with feudal obligations, with a certain social prestige. It wasn't long before the role became almost exclusively ceremonial in nature, with religious symbolism. Although they probably all knew how to ride for a long period and would use that in times of war since it is an advantage, that was just the preferred mode of transport unless roads were good enough for drawn carriages, and higher class people usually had the means to take care of the horse. They were not actually warriors for the most part, more like they had their little fiefdom to manage.
