Your point about acrylics vs oil seems about right, but you can also treat acrylics more like oil with heavy, thick strokes straight from the tube and mixing colors on the canvas, though I don't do that much. I prefer keeping each "group" of colors (depending on what I'm painting blahblahblah) in a little tin can with a lid that I can seal off and re-access and mix as needed. (I use Amsterdam standard 250ml acrylics).

I think you should keep in mind about what you're doing: are you looking to improve your abilities to create good pieces in the future? are you exploring what you enjoy making? are you trying to create solid pieces now? My last year and a half was specifically focused on making pieces I liked in the moment but not for show or sale, but to improve my ability and move on. Looking back, I hate some of my old pieces and I think that's a good sign. I'm investing the money and materials in myself with my explorations over different canvas sizes and subject matters. If you're trying to make specific good pieces, don't be afraid to go over them again and again. Acrylics can be very opaque and you can totally redo a whole area of a painting. My biggest breakthrough was to not be afraid of "ruining" something. Progress is a forward process. You can only move forward by moving. Keep moving.

In the attached pic, I went over the back layer maybe five times. The front grass was mooostly in one sitting. Just for reference. If I were to redo it now, I'd take more time with the front grass to give it more granularity as it feels too blotchy and heavy relative to the finer background.
