No need to regret picking normal. It's one of the most badly tuned difficulties. The game was late GBA and probably rushed out to make a final cashgrab with the GBA assets (which are the awesomest sprites ever).
It's just fucked on the side of being easy so nobody cares. If you analyze the game like me who played it a million times as a kid you will realize how fucked it is ( a lot).
If you pick hard all that happens is random chapters like Ghost Ship difficulty spike to oblivion while most of the game remains easy as fuck since it's all zombies with no defenses.
