The reason EVs feels so snappy to drive is because they don't have to shift. They have only 1 forward gear, like a boat. This is because electric motors can supply torque at 0 RPM, which allows them to overcome the friction between the wheels and road while being in max gear. Gasoline engines can't do this. At low RPM, their torque output is throttled, and so they need to compensate with a smaller gear to get rolling. Shifting up gears happens because the tiny gears quickly spin so fast they overheat. That automatic shifting in gasoline engines is what causes that noticable lag between flooring the pedal and the car actually moving. This never happens in an EV because there's no shifting. It's already in Gear 6 the moment you put it in drive.
There is, technically, that same lag in a manual transmission when you floor it. It's just that you, the driver, are actively either upshifting or downshifting the vehicle yourself, so you don't notice the fact that this is technically a lag because you're the one doing things.
