I would say start with 1 and watch the recap for 2.
3, imo, presents a lot of mechanics which might turn off the new player. 1 is pretty simple compared to 2 & 3 but has a good learning curve. 2 expands on 1 and 3 simplifies 2 mechanics while bringing in new ones. 3 feels like past knowledge is good since all the new rng stuff makes too much visual clutter.
