I got the brain out and it was kind of neat seeing an avulsed segment. This is how the animal was culled likely with the bolt gun applied there.

What wasn't so neat were all the bone shards driven into the meat. You gotta chew carefully.

Oh, I made brain tacos. These tasted breddy good but again, bone shards. Not cool.
