To be fair, Ulquiorra did threaten her, and it's clarified later on that she was psychologically manipulated. She also has issues with her self-esteem and resolve, so I can accept the fact that she cracked because she was terrified. Uryuu, however, has a much weaker case, since he went willingly and personally on his martyr quest without anyone pressuring him. Beyond his own stupidity, I suppose.
