The Edomites were converted under the King High Priest John Hyrcanus. He reconquored areas surrounding Judea after the weakening of the Seleucids, and forced them to adopt the customs of the israelites, among these people were the Samaritans, ironically. In order to co quor, Hyrcanus hired a Mercinary army, as did the jews centuries later in Carthage, and in the process he came into possession of a large population of Edomites, who later converted and intermarried with the Israelites, such as they were. After the Herods, an edomite family whose males bred with jewish women, had Hyrcanus assassinated, they took control of the throne and became the Herodians, who you see attempting to kill Jesus "in the bible.
