Coworker gave me a big green egg. I made some chicken wings to try and feel it out. They were fucking awesome. It was late when I started so I went hot and fast instead of slow. Pollo asada rub with a thin home made hot sauce. Really excellent and really easy, i was worried I'd have to dicker around to hit the right temp but it was simple. I just choked the top vent off and left the bottom alone and walked it to 400 from 350. Never moved.
