That's because after millions of years they are not really bones anymore, they basically imprints on a rock. They have to be removed and handled with extreme care, otherwise they can turn to dust in your hands. And they also need to be stored away from the elements, they can't be just hung up in some display.
Sometimes they put real bones on display but only if it's a species for which there are a shitload of bones already found, so if these get damaged is not that big a loss.
