Epidemiology? aka a questionnaire survey? Or government data interpretation?

Was there actual experiments involved? If so what type of animal fats were they actually using in the "study"? last time i read a paper about saturated fats in a scientific experiment they were using a highly processed and hydrogenated fat that was mixed with some sort of synthetic yellow dye.
