Because zoom zoom nu-devs are too lazy, incompetent, and outright AGAINST making them, and the only tools they know to use (*couch*UE5) do not come with a pre-set project base and tutorial to craft those.
It also takes higher artistic skill and patience to pull off the cinematic camera-angles well, which is something the AAA industry absolutely hates.

Fortunately, we got plenty of indie groups picking up the classic RE / SH torch, and bringing out more and more traditional survival horror games these days. I hear Tormented Souls 2 is also in the works.
