Of course, gender in Votann in general is a very interesting question. Each Kyn, iron or flesh, is a unique creation. They are built for a role in society. So they might have reason to create new genders. Many current and past human societies have extra genders, usually based on some kind of religious or temple duty. If a Kyn is designed to be a Grimnyr, why not make "Grimnyr" a gender in and of itself?
I'm also reminded of that short story, I Sexually Identify As An Attack Helicopter, in which people's genders can be changed to make them better fit their battlefield role. Votann society could have as many genders as their are jobs, and the encoding of gender is where a Kyn is made to fit their specific purpose.
