I just found out there are APWorlds for AM2R and SRB2. They aren't allowed near official Archipelago sources because of their "No Fangames" ruling.

Depends on what you're most familiar with at the end of the day.
Archipelago is super customizable, anyways. You can make it as easy or as hard as you want to. Just as long as you're familiar enough with your game.
Pokemon and most RPGs are probably the most honest Archipelago games you can bring desu.
I might bring Mystery Dungeon to this Tuesday's one, personally. From my experience with the beta branch of it, you never run out of things to do, nearly every check sent to you is positive, and it can be done relatively quickly.
