ive personally found painting knights enjoyable since thinking up and painting new liveries is a lot more engaging then doing the same design over and over again which is a slog.
for horse flesh I havent had trouble, just use some flat color like brown, sand yellow, or grey and dowse it in a wash.

I havent painted bretonians per se, but I have done historicals.
