I learned about this recently. China has about 600M subsistence farmers vs Brazil or America's 3m farmers. It is an extremely backwards and inefficient way to do farming and is an intentional state policy by the CCP because if they automate and reduce the number of farmers to a level that matches other developed countries, the government would have to find hundreds of millions of jobs for them.
So in other words, there are 600M people in China larping as farmers because they have nothing else to do.
