They're basically still human. The building descs in game say they like hanging out in taverns after work drinking, singing shanties, playing cards, and orchestrating dog fights. In battle they'll insult their admiral calling her a pussy for using magic and are generally rebellious. The human pirate loading screen description says that if you pay them enough they'll be okay with fighting for you even after they die so death is a career path for them. It's all right there.
