Both are valid, I don't think there's much difference (long term) between 134 and 0 SPD, it mostly just depends if you can be bothered to change Sunday/Bronya builds everytime you want to use him.
Though if you wanted to super minmax his performance you'd want to run the Hyperspeed Setups.

You can run Bronya+RMC, or Sparkle+RMC; you want Sparkle to have the last pull, otherwise her Skill gets wasted.
And yes, at E0S0 Poet is better than Wavestrider (since he can actually activate the effect)

I'll look into it later, in the beta I mostly focused in Phainon so I didn't test the Fate servants much.
I know that Sparkle with Sunday S1 is his best support and then you can run either Cipher or SW (using the OG Quantum set)

Sunday&Bronya Builds: SPD Boots Phainon with 135 Sunday and 134 Bronya (Sacerdos), ATK Boots Phainon with 161/160 Sunday and Bronya (Sacerdos) or the tryhard Eagle/Vonwacq Setups.
Hyperspeed non-DDD: 157 SPD Bronya (Sacerdos+Vonwacq) 165 SPD Sunday (Eagle+Vonwacq); Bronya opens with a basic attack.
Hyperspeed DDD: 151 SPD Bronya (Sacerdos+Vonwacq) and 160 SPD Sunday (Eagle+Vonwacq); same as above.
Sunday preferably has his signature cone, second best option is Dreamville Adventure.
Bronya is either holding DDD or her Signature.
The difference between setups is purely cycle autism, the 136/135/134 & 161/160 setups are best for casual usage.

Their builds dont really matter and you build them as you normally would (i.e Tingyun 174 SPD with Vonwacq, RMC with 165+ SPD Vonwacq, etc)
If you use Robin you want to use her ult and then use Phainon's ult immediatly after, this way the AV is stored into the next wave, this way your supports will take action as soon as Phainon ult ends.
Cipher doesn't provide any stacks but her Vuln% and DMG Store mechanics work inside Phainon's territory.
If you use Sparkle place her between Sunday and Bronya, any cone.
Ruan Mei can alleviate SPD Goals.
RemMC can hold any core, Shadowburn helps with SP.
Tingyun makes for a great DDD holder.
