Mana Khemia feels more typical to a regular jrpg and serves a soft introduction into Atelier. my personal recommendation.
Otherwise Atelier Marie was the first game and got a remake semi-recently, Ryza, Sophie, and Ayesha are all beginner friendly, or just look for the cutest girl and hop in her game.
