The higher tiers of fish and plants give more stellarites back, and so do very loved animals. The money you earn is the money you get from selling minus the money you spent on seeds/small fish/chow. If you want maximum money you have to buy just enough of your most efficient seeds/fish to reach your weekly cap. Anything produced after that limit is technically a loss of money and falls under what you do with your gains, be it stockpiling materials or boosting levels for plants and fish or making gifts for your besties.
There's a more in-depth analysis to be made though, there's the performance boosters and the plot/pond limit, and how often per day are you willing to log in to restock production. Like if your x1.2 is the fish that takes 4 hours to grow and you are logging in once a day you are not making the weekly limit, you are better off doing a slower fish that will at the end of the week get you all the money you can. I would do more number crunching but I'm missing some theory and formulas, and I'm repulsed by current day spreadsheet suite programs.
