Well, the healing arts are a type of science. But they're not always the same color. TOS had Medical and Science wear different shades. DS9 did that, too. And NuTreks tend to have Medical wearing either white or that alternate shade of blue.
Same deal with operations, really. Security is part of the regular operation of the ship, thus Operations yellow.
Anyways, you wouldn't be desperately looking for someone, you'd be using communications channels to request help from the proper division.
I do agree that a little more clarity would make things smoother. The Wrath of Khan uniforms had a spread of different colors, even if it was just a small stripe on the shoulder while the rest of it was maroon.
