I have tasted the Oosuzuki family's curry recipe and I must say... I am impressed. I don't make curry usually, I just go off what the instructions on the packaging say, yet this had the perfect balance of flavors. The curry roux was delicate and balanced, nothing overtook its flavor, the first bite it's going to be hot. The hour long simmer made the pork ultra tender, it melts in your mouth, and those minutes of marinating in the salt and pepper and being cooked in its own fat just enhanced those flavors even more. It's so savory and umami, I was skeptical of the orange juice and soi sauce but it somehow balanced out the acidity of it. The almond milk mixture was a game changer for me, it made the roux so silky and easy to eat, and finishing the curry with the coffee was perfect.
If I had to taste this version of the recipe done by a real life Oosuzuki I would go eat there regularly. Next time I make this I'm going to try a milder curry, otherwise I'm going to pick up a few techniques to make my own curry from here on out. Definitely recommend if you want to try good curry.
