Play NG Black. It's the definitive version. You can play it on original Xbox, or through backwards compatibility on any of the other Xbox consoles. IIRC you can also buy it from the digital store on newer Xbox consoles. Emulating it is also a decent option, provided you have a decent enough PC. If you absolutely can't do any of those things, NG Sigma (the version included with the NG Master Collection on Steam) is fine, but it is a downgrade compared to Black.

The original 360 version, no contest. Ideally, play it on a newer Xbox through backwards compatibility or emulate it with Xenia if your PC is good. Playing it on original hardware isn't a terrible experience, but it does have significant performance issues. Don't bother with NG2 Sigma or the recent UE5 Remaster.

NG3 Razor's Edge is the best version, it's the only one on Steam. You can also get it on 360, PS3, and even the Wii U if you wanted. No clue what the console performance for the game is like. Absolutely do not under any condition touch the vanilla version of NG3.
