The difference is that while most players treat rations with the same dry pragmatism they count ammo or torches, there's also people who want to get in detail of what their character eats and how is it prepared. Foodies that can't imagine someone wouldn't want to dedicate significant portion of their waking hours to food, roleplay enthusiasts that think it makes their character more alive, the Dungeon Meshi bandwagon... whatever the reason, some people don't find caring about (imaginary) food tedious because they want to care.
