I found an authentic Scottish shortbread recipe about a year ago. It's unholy how good homemade shortbread is, even fresh. They taste best after being left alone for a day. Absurdly simple, too. The only limiting factor is the quality of ingredients. I go for Irish butter, personally, since it's a good quality, and King Arthur flour.

I don't know any dairy farmers in my area, but I will keep an ear to the ground. I try to get local stuff when I can.
