the street food that hundreds of millions of indians eat every day in india is indian food
the food made in some fancy vegetarian restaurant in san jose with organic ingredients, no oil, etc is *also* indian food
saying that some national cuisine is healthy or unhealthy is a lot like saying "anime is good" or "horror movies are bad". there is variation within those genres that makes such statements kind of ridiculous - EVEN if it isn't your personal preference.
india is also a large country, closer to a continent in size, with a lot of different culinary practices. Sweden has a population of like 10 million. India has a population of 1.5 billion. it's a difference of about 150x in scale. people eat dogs in the himalayan mountains. there are jains who don't touch anything that grows in the ground. there are fat guys who love fried shit covered in oil. not sure if you know this but south indians have an incredibly different diet from north indians, and it's very rare to see south indian food in the west, generally.
one of the most surprising things I ate in india was at a restaurant on one of the main avenues of Delhi, where I went into a restaurant and ordered some random chicken dish. When it came back it tasted JUST LIKE CHICKEN ALFREDO. wtf?? is that indian food? yes!
