jews heard about what Akhenhotep tried to do a millenia prior and adopted it themselves. monotheism appeals to the common man, who doesnt want to travel to 6 different temples just to pray for their sick kid

more importantly it appeals to leaders who no longer have to compete with a bunch of different temples who all have their influence and now could easily and simply consolidate all those interests into one instititution

essentially, monotheism appeals to npcs and jews because of its benefits and convenience, but isnt actually true or reflected by reality. if its easier for you, you can just lump all divine things into one category, that which you will call "god" and then just go about your life completely ignorant of your creators, how you came to exist, and the purpose for your being here, and so many other questions, questions which drove the gnostic jews insane when trying to adapt a similar religion to our native one in preparation for their attack upon our gods, but which affirmed their abrahamic idea of their own chosenness (despite being mutted up plague rats with dozens of diseases unique to them)

christianity never defeated our gods, not on any theological basis, they defeated (most often) only a single individual, the ruler, who shoehorned christianity for jewish benefit and made openly practicing our own native religion illegal, forcing us to do so privately. is that worth dying over? for some. but not if youre just an npc or pleb who only believes what others tell them to.
but i guess if you think the gods are supposed to be splitting seas in half and doing harry potter magic and didnt understand that pagan myths werent meant to be literal, but tools to facilitate conceptual understanding for people just like you, then you would probably think so. but still the same gods, regardless of what you worship.
