Psychic abilities rendered more spiritual than scientific. Magic, ESP, sorcery, etc. are just names for achieving supernatural feats using spiritual power.

Lots of different ways, mostly natural talent although dealing with spirits (and taking proper precautions) will strengthen your spiritual power at least a little. Priests usually have stronger spiritual defenses than others, but their power comes mostly from entreating higher spirits to accomplish tasks.
As for espers/sorcerers/etc., most aren't very powerful (fortune telling and the like) but the more talented ones are what you'd expect. Telekinesis, fire starting, clairvoyance, etc. Often takes intense focus and mantras/gestures help with that.
You can also "brute force" awaken these abilities. Usually doesn't go well. Demon summoners ask for power and have some locks opened. Government experiments. Thing is, trying to awaken and speedrun these abilities can kill you or mutate your body as it attempts to contain the increase in power. Kinda like an egg that's too big for the shell, it's eventually going to start cracking and if the shell continually reforms over the leaking egg then it's going to end up looking really weird. That's why some sages and psychics have third eyes or things like an extra finger or macrocephaly. Funny thing is, this occurs even in those that develop their power naturally, the process is simply much, much slower and less atrociously offputting.

I really don't want any "magitech". I don't have any practical reasons yet, I just highly dislike the trope. Nothing saying a demon couldn't manipulate your smartphone if it had a mind to however. Think about that next time it does something it's not supposed to.
